Villa Vittles: Crab cakes!

We’re close enough to the Chesapeake Bay to recognize decent crab cakes, and these are pretty good. Probably a little too complicated for true Villa Vittles, but since one of the tasting panel volunteers was the author of the cookbook the recipe came from, we whipped them up. (We’ll also tell you this week how all of these installments were provisioned. It was SO COOL to let somebody else shop!) This is also 5 minutes long, so you may want to save this for your lunch break. Kathleen Eberlein’s St. John crab cakes below!

Yummy! Yummy! Yummy! I will have my own tasting party at Bongo Bongo in November. I can’t wait. In fact, I may have to try it this weekend. Way to go guys

Looks tasty! but come on, canned crab. People in Iowa use canned crab, people on an island should use fresh crap. think of all the beers you could drink while shelling and cleaning them.

I have to agree about the canned crab. However, they still looked pretty darn tasty.

Last time I checked, you can not get fresh “crap” or crab in the warm waters of the VI.

These cakes are awesome. They are just as much fun to eat as to make. Thanks to Gretchen for the recipe, the cookbook is a treasure chest of unique island flavors.

I must say, these crab cakes are delicious, well worth the effort. They can be made as burgers, served on a toasted bun. The lemon dill sauce is also very tasty. They are called “Sugar Mill Crusty Crab Burgers” in my cookbook, St. John Style. Thanks guys, your tasting party was a BLAST!

Oh yum! These look great! And as for canned crab goes, in a cake I don’t think it really makes a huge difference.

A long time ago, I used to frequent the I-95 route from MA to FL. A place called something like ‘obrickies’ in Baltimore was always our first 400-mile pit stop. Besides the crabs flung right onto the table, the cakes were the next best thing on the menu. I’m now inspired to make some cakes!

I am also inspired to make some. I was at the tasting and they were really delicious. I re-read the recipe in Gretchen’s cookbook, but I’ve never made anything quite like this before.
We’re in a serious food rut here. Ron grills a lot, and everything I make is soup or stew-like.
We are in serious need of some variety. Seeing the Crab Cakes actually being prepared on the video really made me think, I can do that. We’re having these at my house in the very near future.
    Thanks, Jeff & Russ.
