Just wanted to clarify the recipe. Although Jeff said to cook it for an hour, the recipe calls for about a half hour. Didn't want anyone having burnt onions!

Wow .. these look great. I am going to try Cap't's mushrooms with my filets this weekend.

Also, are you guys going to to do a follow-on series on how to properly pack a cooler with all of this stuff to lug onto an airplane? Just asking.... hee hee

So buttery, I can see those glistening lips now. I'm surprised y'all have never had baked Vidalias before? I guess we saved those back from the Yankees!

Cheers, RickG

Quenton,

Are you thinking of the old cajun chef, Justin Wilson? I remember he would cook with "ON-YONS"

I do love these recipes! We do onions on the grill similar...without adding the beef cubes. A pat of butter, wrap with foil tossed on the grill, Serve with steak tips rubbed with lots of St. John Steak Spice~ We will also boil potatoes (as if making potato salad), add chopped fresh garlic & fresh parsley, add butter and what a meal you have! :)

Once again we see Jeff missed his true calling. Not only can he cook, but he always has a cold beer close by.
