Meet Arthur Hercules

Arthur Hercules and his wife Monica have been running Hercules Pate Delight which, not counting a fire last fall that closed it down for several months, has been serving up hot Pate for more than 20 years.

Things you may not know about Arthur Hercules: He studied at the Culinary Institute of America in Hyde Park, NY. He spent time in the Grand Tetons. He got his start as a houseman at the Hilton on St. Thomas. And before opening Hercules Pate Delight, he worked at Caneel Bay, where he met Monica.

  2. Great piece! We have been enjoying those pate’s for years. Best on the island by far. I tried to get him to consider a breakfast version- egg, sausage, cheese, peppers. Maybe some day…

  4. I always hear about pates but never really knew what they were…now I’m jonesing for one!! Hercules is going to the top of my “must try next time” list!!

  5. When I lived on St. John I would snack on the beef pate. Don’t miss the oxtail and other West Indian favorites. OH you can’t beat the price.

  7. The salt fish pate are delish!! Two pate’s with a little hot sauce in them and a diet coke and you’ve got a meal.

  8. I have had a Hecules Pate every visit to St John over the last 13 yrs. Wake up and take the Westin shuttle straight for a breakfast delight. The beef pate is my favorite 🙂 What a wonderful place and great people!
