Caribbean ribs win Minnesota competition

Say hello to Dave and Laurie Drolson, from Forest Lake Minnesota.

They’ve been traveling to the Virgin Islands since 1998 and have a fondness for St. John restaurants.

Enough so, that Dave was inspired to enter a local smoker rib competition using all Caribbean ingredients.  And he won 1st Place.

“My spices I ordered from St. John Spice, including Java Booty Rub and Cruz Bay Grill Rub, and my grilling spray was basically a six finger Pusser’s Painkiller,” says Dave. “The ribs were 100 percent St. John and St. Thomas themed, and the people here just loved them.”

Dave, whose favorite beaches are Leinster, Cinnamon, Hawksnest and Maho, says¬† he’d be happy to offer his services to a St. John restaurant. “I’d even be willing to re-locate!”

  2. I don’t eat ribs, but Dave has also smoked chicken breasts using the same rubs. So good! I think I’ll have him do a turkey breast this weekend.

    He’s already planning a stop at St John Spice on our next trip to the island…talking about shipping a bunch of stuff home. I think a monster has been created.
